The idea of this book spen a long time cooking. It was still a vague idea, without form or structure, only a wish; until, one summer afternoon, things began to take shape at a table in Arigato. It was in July 2016, when João Banazol invited Cristina Cordeiro to come up with and editorial project to recount the adventure of creating a Portuguese style sushi restaurant. Ricardo Oliveira Alves, a photographer with vast experience in the culinary area, and Ivone Ralha, a graphic designer, illustrator and artist were on board from the very start. The project grew as the narrative came together. From the origins of fermentation, to the birth of sushi, from its expansion throughout the world, to the pioneers of the Japanese restaurants in Lisbon between 1985 and 1993. This was how the Origami (now Arigato) project grew. During a memorable lunch at his official residence in Restelo, Ambassador Hiroshi Azuma brought us up to date on relations between our two lands. The historical and cultural ties linking the two countries, a relationship marked by moments of light and shadow, go back to the 16th century. In presenting this long journey, we have picked out the main steps. This is how it happened.
